What Is a Kamado Grill?

If you look forward to grilling season every year, you may think that you know about all the kinds of frills out there that you can use. However, you may not be familiar with the kamado style grill. 

Kamado Grills

Kamado grills are based off Japanese cooking ranges that use charcoal for fuel. After WWII, when soldiers came back from their tours of duty in Japan, portable kamado grills came with them. The portable kamados were made out of clay, with a round pot for a bottom and domed lid for the top. These days, kamado grills are made out of metal and ceramics and are generally oval shaped. However, if you want, you can still find traditional kamado style grills that are made out of clay like the ones that were seen in Japan and exported throughout the rest of the world. 

Using a Kamado

At the bottom of a kamado grill, there is a fire box. If you are going to use one of these grills, you put some lump charcoal in the fire box. The reason that lump charcoal is recommended is because it burns more efficiently that other kinds of charcoal. Before lighting the charcoal, you need to make sure that all the air vents are open so that there is enough air to keep the fire going at the beginning. You can start the charcoal using a charcoal lighter, but never lighter fluid because it may get into the lining of the grill and mess with the taste of your food. 

After the fire is going, you can start to control the fire's heat using the vents at the bottom by the fire box. Cool air is drawn through those vents, fans the fire, which heats the grill, and then hot air escapes the vent at the top. Once you have the fire going really well, you can start to control how hot you want the grill to get. The way to control it is to open or close the vents at the bottom and the damper at the top. If you want to cook something at a low temperature for a long time, you would close the vents almost all the way so that the coals die back some and stay at the lower temperature you want. When you are all done cooking, you would just close everything and keep the oxygen from going into the grill altogether.
